Italy has long been known as one of the great places on Earth to find delicious food and excellent wines. But a little known secret about Italy is that the island of Sardinia boasts the freshest seafood, the finest meats, most delicious cheeses, and some of the highest quality produce in the country. From root to fruit, from net to table, the cuisine of Sardinia is unique, healthy and unforgettable.
First and foremost, Sardinia is a long, narrow island with a robust interior and many miles of pristine shoreline. One doesn't have to travel very far, even from its center, to reach the Mediterranean Sea. And that means lobsters, crabs, squid, eels, clams, mussels and anchovies. In our hotel restaurant you will be able to sample a wide variety of seafood dishes including our wildly popular Swordfish Carpaccio freshly caught from the sea beneath your room. Sardinian waters are some claim, to be the purest on the planet. Each day, Sardinian fishermen head out to sea, gathering the finest, freshest seafood you will ever eat. Simple preparations, like grilling, steaming or raw are often the best ways to indulge in the fresh frute de mar. But the Sardinians also serve their seafood in pastas and stews, including two local favorites, Burrida and Cassola, spicy fish soups that will leave you begging for seconds.
Sardinia is also famous for some of the finest cheeses in Italy. If you like it sharp, try the Sardo Pecorino, a traditional goat's milk cheese. Or try the Dolce Sardo cheese, served in our restaurant in phyllo pastry nests on a bed of mango coulis. Talk about fresh produce, Sardinia supplies much of mainland Italy with organic artichokes, eggplants, fava beans, peas & zucchini and are available fresh daily often picked that morning. For bread lovers, each village in Sardinia produces its own delectable style of loaf, with over 500 varieties from coast to coast. If pastries are your weakness, be sure to pack your appetite!
Roasting meats is a time honored Sardinian tradition, over an open fire of aromatic wood with myrtle branches. Through centuries of attack by hostile forces, the Sardinian villagers have often sought shelter in the mountains which are teeming with wild boar, rabbit, sheep, goat and an array of wild game. The meats of Sardinia are unique and have the wonderful flavors of the mountains, attributed to the animals eating the richly aromatic herbs that grow wild across the island. Sardinians will rarely miss an opportunity to roast a pig for a wedding, festival, holiday or get-together!
Then of course there's Pasta. Oh, the pasta! Sardinia is known for a long list of pasta dishes including Spaghetti con Bottarga, a popular dish topped with a delicate dried shaved fish roe. Another favorite is a delectable saffron flavored gnocchi called Malloreddus served with tomato sauce. Sardinia is also the home of a ravioli style pasta known as culurgiones, stuffed with spinach and pecorino cheese and topped with a choice of sauces. With each delectable bite you will know that you have arrived to gastronomic heaven and for each bite there is a wine to match!
